The French grown and processed flour is milled to T55 giving it a lighter and fluffier consistency. It has a lower gluten content than most other flours and is intended for baking soft, fluffy things like chiffons, sponges, pancakes, crêpes, etc. Try it out with many baking recipes and feel the difference it makes.
